Many of us think of saffron as the stuff of legend, a remarkably expensive spice, an extraordinarily labour-intensive plant and a precious and exquisite ingredient we rarely see and more rarely taste.

More of us might be surprised to learn Norfolk was once famous for its saffron and even more surprised to know that, since 1997, Oxford trained botanist, Dr. Sally Francis, has developed her multi award-winning company, Norfolk Saffron at Burnham Norton into the UK’s pre-eminent saffron producer.

Sally will talk about saffron cultivation, harvesting, processing and marketing and its use in cooking and in Norfolk Saffron products including saffron flour and liquor.
